Ingredients

1 whole broiler-fryer chickens
1 tablespoon olive oil
1 garlic clove , minced
1 tablespoon minced thyme leaves
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
3/4 cup dry white wine ( such as Chardonnay or sauvignon blanc )

Instructions

1.Preheat a gas grill to high (400°F to 450°F).
2.Remove and discard giblets and neck from chicken. Remove excess fat. Rinse chicken inside and out with cold water; pat dry. Rub outside of chicken with oil. Rub minced garlic, thyme leaves, salt, and pepper inside cavity and all over outside of chicken.
3.Open beer can; drink half. Place beer can on work surface. Holding chicken upright with cavity facing down, lower chicken onto can so it fits securely.
4.Pour wine into a small saucepan; bring to a boil on grill.
5.Carefully place chicken, still attached to can, upright on grill (keeping the can upright). Cover grill; grill chicken until cooked through and a thermometer inserted in thickest portion of thigh registers 165°F, about 1 hour and 15 minutes. Remove chicken and can from grill; let stand 10 minutes. Carefully lift chicken off can; discard can. Carve chicken into pieces, and serve with sauce.
