5 lbs beef brisket

2 quarts homemade beef stock or 2 quarts good-quality canned beef broth
1/4 cup homemade beef stock or 1/4 cup good-quality canned beef broth
1 cup white pearl onion
minced parsley ( to garnish )

Instructions

1.Preheat oven to 350°F (180°C).

7.In a separate pan, caramelize the pearl onions using 1/4 cup of beef broth. Add salt and pepper to taste.
8.Serve the warm brisket with the caramelized pearl onions and minced parsley on top.
