Ingredients

2 tablespoons butter
1 1/2 cups frozen chopped onions
1 stalk celery , finely chopped
1 cup finely chopped green apple
1 box long grain and wild rice blend ( Near East or Zatarains )
2 1/2 cups vegetable broth ( or water )
4 garlic cloves , chopped
1/2 cup chopped pecans
15 large green cabbage leaves
1 jar marinara sauce ( Newmans Own or you can use homemade )
The Wild Rice Stuffed Cabbage(Vegetarian)recipe is a unique spin on traditional stuffed cabbage rolls. Instructions

1.In a saucepan, melt butter over medium heat.
2.Add onions and celery, then sauté until the onions start to become translucent.
3.Add apple, garlic, rice, and vegetable broth to the pan and stir well. Bring it to a boil before reducing the heat to low, then cover the pan and allow it to simmer for 20-25 minutes.
4.Toast chopped pecans in a pan until fragrant.
5.Preheat your oven to 350°F and bring a large pot of salted water to a boil.
6.Remove the leaves from the cabbage one by one and blanch them in boiling water for a few minutes. Remove them and place them on a plate or baking sheet to cool.
7.Take a heaping spoonful of the rice mixture and place it onto the center of the cabbage leaf. Roll the leaf and tuck in the sides to make a neat little package.
8.Place the stuffed cabbage leaves in the baking dish. Pour marinara sauce over the top and sprinkle the toasted pecans on top.
9.Bake it uncovered in the oven for about 45 minutes until it’s heated throughout and the sauce is bubbly and browned.
