Ingredients

6 ounces wild rice
3/4 cup dry vermouth
1/4 cup butter
3 tablespoons onions , finely chopped
1/2 liter mushroom
2 eggs , well beaten ( optional )
salt and pepper

Instructions

1.Rinse the rice under running water and place it in a pot with 2 cups of water, cover, and bring to boil. Reduce the heat to low and simmer for 45 minutes. Drain the rice and reserve.
2.In a large skillet melt the butter over medium-high heat, add the onions and cook until translucent. Add the mushrooms and cook for another 5 minutes.
3.Add the vermouth and cook until evaporated. Add the rice to the pan and toss over medium heat until fully coated with the mushroom mixture. Season with salt and pepper.
4.If using, whisk the eggs and add them to the skillet. Toss to combine and cook for 1-2 minutes, or until the eggs are set.
