Instructions

1.In a large mixing bowl, combine 1 cup of bread flour, the yeast, nonfat milk, honey, butter or shortening, and salt.
2.Beat with an electric mixer on low speed for 30 seconds, scraping the sides of the bowl constantly while mixing.
3.Beat on high speed for 3 minutes.
4.Stir in the whole wheat flour, wild rice, oat bran, and enough bread flour to make a stiff dough.
5.Knead on a lightly floured surface for 8 to 10 minutes.
6.Cover and let the dough rest for 10 minutes.
7.Punch down the dough. Shape into a loaf and place in a greased bread loaf pan.
8.Cover with a clean kitchen towel and let rise in a warm, draft-free place for 45 minutes.
9.Preheat the oven to 375 degrees F (190 degrees C).
10.Bake for 35 to 40 minutes or until the bread sounds hollow when you tap the top of it.
11.Remove from the pan and allow to cool on wire racks.
