Ingredients

15 ounces larch wild mushrooms
1 pickled red onion
8 ounces spinach , blanched
1/4 ounce gelatin
60 spring green baby leeks
1 garlic clove
1/2 bunch fresh thyme
1 teaspoon grapeseed oil
2 teaspoons sherry vinaigrette
salt
pepper

Instructions

1.Heat Grapeseed oil in a non-stick pan and add garlic and thyme. Cook well for a minute.
2.Turn heat up to high and add sliced mushrooms. Cook until the mushrooms are slightly browned.
3.Sprinkle gelatin over 1/4 cup cold water and set aside for 10 minutes.
4.Pour sherry vinegar over the mushrooms and cook for a couple more minutes.
5.Squeeze excess water out of the spinach and chop it up. Season mixture with salt and pepper.
6.Reheat gelatin mixture and add to the pan over low heat. Mix well and let cook for a few minutes.
7.In a terrine mold, layer mushroom mixture and spinach, alternating layers until the mold is full.
8.Let the terrine cool and refrigerate overnight.
9.To serve, flip the mold onto a platter and top with pickled red onion.
