2 garlic cloves , 1 peeled , 1 peeled and pureed
2 tablespoons unsalted butter
1/2 shallot , finely chopped

1/2 lemon , juice of
flat leaf parsley , coarsely chopped
2 tomatoes , quartered , de-seeded and cut into 1/4in dice
