Wife Pastry (Lo Po Bang) is a popular sweet treat in China, originating from the Guangdong province. It is named Lo Po Bang, which means 'old lady cookie,' because it is a favorite food among elderly women. This pastry features a crisp and flaky exterior that is filled with sweet rice flour dough and candied waxgourd. The dough is soft and chewy, but the candied waxgourd filling adds a pleasant crunch to each bite. It is enjoyed as a dessert or snack and is a perfect addition to any afternoon tea or coffee time. Instructions

1.In a mixing bowl, combine 2 cups of cake flour and 2/3 cup of confectioners' sugar. Rub in 1/4 cup of butter until crumbly.
2.Gradually add 1/2 cup of water, in small portions, to form a smooth, pliable dough. Knead the dough until smooth and set aside for 30 minutes.
3.In a separate mixing bowl, combine 2 cups of cake flour and 2 tablespoons of confectioners' sugar. Rub in 1/2 cup of vegetable shortening until crumbly.
4.Gradually add 2/3 cup of water, in small portions, to form a smooth, pliable dough. Knead the dough until smooth and set aside for 30 minutes.
5.Mix 1 cup of shredded candied waxgourd with 1/2 cup of water until well combined.
6.In a third mixing bowl, combine 1 1/2 cups of sweet rice flour, 3/4 cup of superfine sugar, and 1/4 cup of toasted sesame seeds. Rub in 1/4 cup of vegetable shortening until crumbly.
7.Gradually add the waxgourd mixture to form a soft dough. Divide it into 30 equal portions.
8.Divide the cake flour dough and shortening dough each into 15 equal portions. Flatten each piece of dough and place a piece of the sweet rice flour dough in the center.
9.Wrap the filling with the dough and form it into round shapes.
10.Brush the pastries with beaten egg yolks and bake at 375°F for 20 minutes.
