Ingredients

12 baby potatoes , peeled & halved
sea salt , to taste
fresh ground black pepper , to taste
3 eggs
2 egg yolks
1 tablespoon Dijon mustard
2 garlic cloves , minced
500 ml vegetable oil
2 lemons
2 tablespoons olive oil
2 -3 slices bacon , rashers rindless , sliced
plain flour , for flouring schnitzels
1/4 cup milk
breadcrumbs , for crumbing
1 tablespoon fresh parsley , chopped
4 veal schnitzels
2 -3 spring onions or 2 -3 green onions , chopped
Wiener Schnitzel is a classic main dish originating from the Viennese cuisine in Austria, and it has become a staple item on menus all over the world. Instructions

1.Place the potatoes in boiling salted water and cook until tender (around 15 minutes).
2.In a bowl, mix the eggs, egg yolks, Dijon mustard and minced garlic.
3.Heat vegetable oil in a large frying pan over medium heat. Ensure the oil is hot to prevent the schnitzels from becoming oily and soggy. Add a slice of lemon to the oil to add flavor.
4.Meanwhile, slice the bacon into thin strips and fry until browned, then set aside.
5.Drain the cooked potatoes and mix with olive oil, thin strips of bacon, chopped parsley, and chopped spring onions. Season with salt and pepper to taste.
6.Flour the schnitzels and dip in the milk, then coat in breadcrumbs.
7.Fry in the hot oil until lightly golden brown. Do not overcrowd the frypan and adjust the temperature of the oil as necessary to prevent burning.
8.Drain excess oil from the schnitzels on paper towel.
9.Serve the schnitzels topped with a squeeze of lemon juice and with the potato salad on the side.
