Ingredients

4 ounces pudding rice
2 ounces sultanas ( optional )
1/2 pint whole milk
1/2 pint single cream
1 can evaporated milk
4 ounces soft brown sugar
1 whole nutmeg
2 ounces butter , cubed

Instructions

1.Preheat the oven to 150 degrees C.

5.Grate the nutmeg over the top of the mixture and stir it in.
6.Cover the dish with aluminum foil and bake for 2.5 hours.
7.Remove the foil after the first hour and stir the ingredients.
8.After 2.5 hours, check the texture of the pudding. If it is too dry, add some more milk and cook for another 10-20 minutes.
9.Once the pudding is done, remove from the oven and serve hot or cold.
