Ingredients

400 g tinned chickpeas , drained and rinsed
1 lemon , juice of
4 canned roasted peppers ( reserve the oil for drizzling ) ( optional )
2 tablespoons tahini
1 garlic clove , thinly chopped
120 ml olive oil
black pepper
flat leaf parsley , to garnish
1 onion , finely chopped
1/2 teaspoon ground cinnamon
1/2 teaspoon cumin seed
250 g ground lamb
olive oil , for drizzling
pitta bread , griddled
Wicklewood's Roasted Pepper Hummus With Crispy Lamb is a flavourful and satisfying appetizer that is perfect for any occasion. The creamy hummus pairs perfectly with the crispy lamb, making it a crowd-pleaser for any party or gathering. The roasted peppers bring a smoky and rich flavour to the hummus that is sure to leave your taste buds tingling. This dish is perfect to serve as a starter or even as a light lunch or dinner.

Instructions

1.Preheat your oven to 190°C/ 170°C fan/ gas mark 5.
2.In a food processor, blend the chickpeas, lemon juice, roasted peppers, tahini and garlic until smooth.
3.Gradually add the olive oil and some black pepper. Continue blending until the mixture is smooth.
4.Transfer to a serving bowl and chill in the fridge for at least half an hour.
5.In a pan, heat up some olive oil and fry the onion until it turns soft.
6.Add in the ground cinnamon and cumin seed. Stir everything together until fragrant.
7.Add in the minced lamb and cook for around 10 minutes until it's brown and crispy.
8.To serve, top the hummus with the crispy lamb mixture.
9.Garnish with flat leaf parsley, and add an extra drizzle of oil from the roasted peppers can, if desired.
10.Serve with pitta bread on the side, which you can heat in a griddle.
