Instructions

1.In a bowl of an electric mixer, add gluten-free flour blend, dried yeast, melted butter, warm milk, caster sugar, mixed dried fruit and mixed spice. Mix well to combine.
2.Knead the dough well until it forms a smooth ball and leave it in a warm place for about 1 hour to rise.
3.After 1 hour, knead the dough once again and roll it into 10x7-inch rectangle.
4.Cut the marzipan into small pieces and place them in the center of the rectangle.
5.Fold the dough over the marzipan stick and press the edges to seal.
6.Place the stollen on a buttered baking tray and bake in the preheated oven at 200 degrees C for 30-40 minutes.
7.Let it cool completely. Combine icing sugar and lemon juice in a bowl to make a glaze and drizzle it on top. Sprinkle toasted flaked almonds on top. Serve and enjoy!
