1 lb potato , peeled
3 leeks , sliced
6 eggs
4 ounces butter
1 pint milk
2 ounces cornflour
4 ounces cheddar cheese
seasoning
1 teaspoon vinegar

Instructions

1.Boil the potatoes until soft, then mash them with half the butter and seasoning.
2.Place the leeks in a saucepan with just enough milk to cover, bring to the boil, then simmer until tender.
3.Combine the cornflour with a little water, then add to the leeks with the vinegar and some seasoning. Cook for a few minutes until thickened.
4.Cut four rounds of buttered greaseproof paper and use to line ramekins.
5.Fill each with a layer of mashed potato, some of the leeks, then a poached egg.
6.Spoon over the remaining sauce, then sprinkle with grated cheese.
7.Bake for about 15 minutes at 200°C until the cheese is melted and golden.
