Instructions

1.Cook bacon in a large pot until crispy. Remove bacon and set aside.
2.Add 2 lbs of chopped carrots, 3 chopped garlic cloves, and 2 chopped celery sticks to the same pot and cook for 5 minutes until slightly softened.
3.Add 2 large roughly chopped onions, 1/2 large diced swede, 1 lb of diced potatoes with skins left on, 2 pints of water, 1 teaspoon salt, 1/2 teaspoon peppercorn, and 2 large bay leaves. Bring to a boil, cover, and simmer for 20 minutes.
4.Add another 2 lbs of chopped carrots, 2 lbs of diced potatoes with skins left on, 1/2 large diced swede, 2 finely chopped onions, 3 sliced leeks, and 8 ounces of red lentils. Simmer for another 20 minutes until vegetables and lentils are cooked.
5.Remove bay leaves, blend soup until smooth, and serve topped with diced cooked bacon and chopped parsley.
