Ingredients

250 g dried pitted dates
1 cup whole wheat flour
1 cup plain flour
1 tablespoon icing sugar
salt
40 g low-fat margarine
1 egg , lightly beaten
1/3 cup skim milk
Wholemeal Date Scones are a healthy twist on the traditional scone. Made with whole wheat flour and dried pitted dates, these scones are packed full of fiber and other essential nutrients. Not only are these scones healthy, but also quick and easy to make, making them a great choice for busy mornings. They are perfect for breakfast or brunch and go great with a cup of coffee or tea.

Instructions

1.Preheat the oven to 200°C (180°C fan)
2.Place dates in a bowl and cover with hot water. Let them soak for 10 minutes, before draining and finely chop.
3.In a large mixing bowl, mix together wheat flour, plain flour, icing sugar and salt.
4.Rub margarine into the flour mixture until it resembles breadcrumbs.
5.Stir in chopped dates.
6.In a small bowl, beat together the egg and milk.
7.Make a well in the centre of the flour mixture and pour in the egg and milk mixture.
8.Combine the ingredients to form a soft, dough. Be careful not to overmix.
9.Turn the dough out onto a floured surface and shape into a round. Use a sharp knife to cut the dough into 8 equal wedges.
10.Place the scones onto a greased baking tray, brush with milk and bake for 10-12 minutes, or until risen and golden.
