Instructions

1.In a large mixing bowl, whisk and combine the whole wheat flour, all-purpose flour, salt, baking powder, baking soda, and mixed Italian herbs (if using).
2.Add in the coconut oil and mix well, until the flour mixture has a crumbly texture.
3.Add the ice water in small batch and mix with a wooden spoon until the dough forms a ball. Cover the dough with a damp cloth and let it rest for 20 minutes.
4.Divide the dough into 10 portions and shape it into a ball. Cover the balls with a damp cloth and let them rest for 10 minutes.
5.On a floured surface, roll out each ball into a 1/8 inch thick circle. Cook in a hot dry skillet or grill pan for 1-2 minutes on each side, or until it forms light brown spots.
6.Serve the piadinas hot or cold with your favorite fillings.
