2 cups bread flour , plus more for dusting
2 cups whole wheat flour
1/4 cup nonfat dry milk powder ( I leave this out and use soy or almond milk instead of the water )
1 large egg
2 tablespoons canola oil , plus more for brushing
3 tablespoons honey
2 teaspoons salt
1 1/2 teaspoons instant dry yeast
cooking spray
2/3 cup raisins
1 tablespoon ground cinnamon plus 1 teaspoon ground cinnamon
1/3 cup packed dark brown sugar ( may add in a tbls . of molasses if you like )

Instructions

1.In a large bowl, whisk together 2 cups bread flour, 2 cups whole wheat flour, and 1/4 cup nonfat dry milk powder.
2.In a separate bowl, whisk 1 large egg and then add 2 tablespoons canola oil, 3 tablespoons honey, 2 teaspoons salt, and 1 1/2 teaspoons instant dry yeast dissolved in 1 and 1/4 cups warm water. Stir this mixture into the flour mixture.
3.Mix in 2/3 cup raisins, 1 tablespoon ground cinnamon and 1 teaspoon ground cinnamon, and 1/3 cup packed dark brown sugar (may add in a tbls. of molasses if you like) until evenly incorporated.
4.Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 10 minutes. Lightly oil a large bowl, place the dough in the bowl, and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
5.Preheat oven to 375°F (190°C). Grease a 9-inch loaf pan with cooking spray, dust with flour, and tap out excess.
6.Punch down the dough, transfer to a lightly oiled surface, and roll to a rectangle of 9x14 inches. Roll up tightly and place seam-side down in the prepared pan. Cover with a damp cloth and let rise for 30-45 minutes.
7.Brush the loaf with canola oil and bake until browned and the loaf sounds hollow when tapped, about 35-40 minutes. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
