13 ounces warm water
2 teaspoons sugar
2 teaspoons yeast
1 cup whole wheat flour
1 3/4 cups bread flour or 1 3/4 cups all-purpose flour
1/2 cup semolina flour ( a MUST ! )
1 teaspoon salt

Instructions

1.Add warm water and sugar in a large mixing bowl.
2.Sprinkle the yeast over the water and gently stir until the yeast dissolves.
3.Add whole wheat flour, all-purpose/bread flour, semolina flour, and salt to the bowl.
4.Stir with a wooden spoon till the mixture comes together.
5.Knead the mixture for at least 10 minutes.
6.Transfer the dough to a floured surface and knead it for a further 2 minutes.
7.Place the dough in a greased bowl, cover with a damp cloth, and leave it to rise for about an hour.
8.Preheat the oven to 425°F (218.333°C).
9.Punch the dough to deflate it, then roll it to the shape you want.
10.Add your desired ingredients and bake for 12-15 minutes.
