4 -5 lbs whole beef tenderloin
1 tablespoon black peppercorns , crushed ( not ground )
1 tablespoon kosher salt
1 tablespoon Dijon mustard
1 tablespoon minced garlic
1 1/2 tablespoons olive oil
1 tablespoon olive oil ( to sear the tenderloin )
1 tablespoon butter ( to sear the tenderloin )
1/2 cup unsalted butter
1 tablespoon drained green peppercorn , rough chopped ( they usually come packed in a brine or water , available at specialty food stores )
1 shallot , minced very fine
1 teaspoon fresh lemon juice
1/2 teaspoon Dijon mustard ( no yellow mustard )
1/4 teaspoon Worcestershire sauce
1/4 cup fresh parsley , fine chopped
gorgonzola , crumbles
onion rings , very thin sliced and fried

Instructions

1.Preheat the oven to 450°F (232°C).
2.Rinse the beef tenderloin and pat it dry with paper towels.
3.Combine crushed black peppercorns, kosher salt, Dijon mustard, minced garlic and olive oil. Rub the mixture over the tenderloin.
4.Heat olive oil and butter in an oven-safe skillet over high heat. Sear the tenderloin until browned on all sides.
5.Transfer the skillet to the preheated oven. Roast the beef tenderloin for 15 minutes.
6.Lower the oven temperature to 350°F (177°C). Continue to roast for about 25-35 minutes or until the internal temperature of the tenderloin reaches 130°F (54°C), using a meat thermometer.
7.Remove from the oven and let it rest for 10 minutes before serving.
8.To make the green peppercorn butter, combine unsalted butter, drained and rough chopped green peppercorns, minced shallot, fresh lemon juice, Dijon mustard, Worcestershire sauce, and fresh parsley. Whisk until well combined.
9.Serve the beef tenderloin with the green peppercorn butter, gorgonzola crumbles, and onion rings.
