2 cups rye flour
3 1/2 cups whole wheat flour

Instructions

1.In a large bowl, mix the honey, molasses, and salt (if using).
2.Add the butter and caraway seeds and pour in the boiling water, stirring until the butter has melted.
3.In a small bowl, dissolve the dry yeast in the warm water and let it sit for 5 minutes until frothy.
4.Mix the rye flour and half of the whole wheat flour into the large bowl until incorporated.
5.Add the yeast mixture and mix well, then slowly stir in the remaining flour until the dough becomes too thick to stir.
6.Knead the dough on a floured surface for 5-10 minutes until smooth and elastic. Place in a greased bowl, cover and let rise for 1 hour.
7.Preheat the oven to 350°F and grease a loaf pan. Punch down the dough and shape into a loaf, then transfer it to the greased pan. Let it rise once more for 20-30 minutes.
8.Bake for 40-50 minutes until the top is golden brown and the loaf sounds hollow when tapped. Let cool before slicing and serving.
