Ingredients

3 shallots
1 carrot
1 bay leaf
1 rosemary sprig
1 3/4 kg whole duck
2 tablespoons olive oil
150 ml chicken broth ( concentrated )
200 ml orange juice
2 teaspoons salt and pepper
80 g sugar
50 ml cooking juice from duck
200 ml orange juice
3 tablespoons white balsamic vinegar
1 tablespoon cornflour
2 oranges
This whole duck in glossy orange sauce recipe is perfect for a special occasion, such as a holiday feast or fancy dinner party with friends and family. The duck is first seasoned with salt and pepper and roasted in the oven until tender and golden brown. Instructions

1.Preheat oven to 350°F.
2.Season the duck with salt and pepper, both inside and outside.
3.Place the duck in a roasting pan and cook in the oven for 1.5-2 hours, until tender and golden brown.
4.In a saucepan, heat the olive oil over medium heat. Add the finely chopped shallots, grated carrot, bay leaf, and rosemary sprig.
5.Cook for 5-7 minutes, or until the vegetables are soft and fragrant.
6.Add 200ml of orange juice and 150ml of concentrated chicken broth to the saucepan. Stir to combine.
7.Add 80g of sugar and simmer until the sugar has dissolved and the sauce has thickened.
8.Add 50ml of cooking juice from the duck to the saucepan. Add the juice of 2 oranges and stir to combine.
9.In a separate bowl, mix 1 tablespoon of cornflour with 3 tablespoons of white balsamic vinegar until smooth. Gradually add the mixture to the saucepan, stirring constantly, until the sauce has thickened and is glossy.
10.Serve the duck with the glossy orange sauce poured over it.
