Ingredients

1/2 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
3 lbs chicken
2 tablespoons olive oil
1 large onion , thinly sliced
2 inches piece ginger , grated
2 1/2 cups chicken stock
2 preserved lemons , cut into wedges
1/2 cup pitted black olives
1 tablespoon honey
4 tablespoons fresh coriander , chopped
salt and pepper

Instructions

1.Preheat your oven to 350 degrees F.

3.In a large ovenproof pot, heat the olive oil over medium high heat. Add the chicken and cook until browned on all sides. Remove and set aside.
4.In the same pot, sauté the onions and ginger until soft and fragrant. Add the chicken stock and bring to a simmer.
5.Add the preserved lemons, olives, and honey to the pot. Stir gently to combine.
6.Return the chicken to the pot, skin side up, and place in the oven. Bake uncovered for 50-60 minutes or until the chicken is fully cooked.
7.Sprinkle the fresh coriander over the top and serve.
