Ingredients

2 flounder or ( 3 lb ) sole , cleaned and scaled
2 limes , juice of
3/4 cup Spanish olive oil , divided
2 onions , peeled and thinly sliced , divided
1 large green bell pepper , cored , seeded , and thinly sliced , divided
3 bay leaves
salt & freshly ground black pepper
1/2 - 3/4 teaspoon crushed red pepper flakes
1 tablespoon minced garlic
2 1/4 teaspoons kosher salt
1 teaspoon dried oregano , crumbled
1 cup tomato puree
2 tablespoons white wine vinegar
1 cup dry white wine
chopped fresh parsley leaves , for garnish

Instructions

1.Preheat the oven to 375 degrees F.
2.Season the fish inside and out with lime juice, 1/4 cup of olive oil, salt, and black pepper.

6.Spread half of the mixture over the bottom of a large, shallow baking dish.
7.Arrange the fish on top and top with the remaining onions and peppers.
8.Pour the wine over the fish.
9.Cover the dish with foil and bake for 25 to 30 minutes, or until the fish is cooked through and flakes easily with a fork.
10.Garnish with parsley and serve hot with rice or boiled yucca.
