Ingredients

1 medium onion , finely chopped
2 green onions , thinly sliced
2 tablespoons olive oil
1 package frozen chopped spinach , thawed , drained and squeezed dry
1 package firm tofu , drained ( I use silken , but any texture would work )
1 tablespoon fresh dill or 1/2 teaspoon dried dill weed
1 tablespoon lemon juice
1/4 teaspoon pepper
1/4 teaspoon salt
1 package frozen phyllo dough ( fresh or frozen just check that its vegan )
1/2 cup vegan margarine , melted
Spanakopita is a traditional Greek dish made with phyllo dough, feta cheese, and spinach. Instructions

1.Preheat the oven to 350°F (175°C).
2.In a skillet, sauté the chopped onion and green onions in olive oil until translucent.
3.Add the spinach to the skillet and cook until heated through.
4.In a food processor, blend the tofu, dill, lemon juice, pepper, and salt until smooth.
5.Add the tofu mixture to the skillet and stir until well combined.
6.Grease a 9x13 inch baking dish and layer 5-6 sheets of phyllo dough, brushing each layer with melted margarine.
7.Spread the spinach mixture over the top of the phyllo dough.
8.Cover with 5-6 more layers of phyllo dough, brushing each layer with melted margarine.
9.Bake in the preheated oven for 30-35 minutes, or until the top is golden brown.
