Ingredients

1/4 lb chopped onion
1/4 lb chopped leek
1/4 lb chopped celery
1/4 lb chopped peeled parsnip
1/8 lb mushroom , trimmings approx weight ( optional )
White Mirepoix soup is a creamy and comforting soup that gets its name and unique flavor from the combination of four simple vegetables; onion, leek, celery, and parsnip. These vegetables are sautéed until tender before being simmered in broth or water and then pureed to create a smooth, velvety texture. The mushroom trimmings, while optional, add an earthy flavor to the soup that complements the other vegetables nicely. This soup can easily be customized by adding in your favorite herbs or spices, or by swapping out the parsnip for a different root vegetable.

Instructions

1.Rinse and chop all the vegetables as listed. Keep the mushroom trimmings separate from the other vegetables.
2.In a medium-sized pot, heat 2 tablespoons of olive oil over medium heat.
3.Add the onion, leek, celery, and parsnip to the pot. Cook for about 10-12 minutes or until the vegetables are tender.
4.In a small pan, sauté the mushroom trimmings in 1 tablespoon of olive oil for 5-7 minutes. Add the cooked mushrooms to the pot.
5.Add enough water or broth to the pot to cover the vegetables, and bring to a boil. Reduce heat and simmer for about 30-40 minutes.
6.Once the vegetables are tender, allow the soup to cool slightly before pureeing with an immersion blender or in batches in a blender. Season with salt and pepper to taste.
