Ingredients

1 1/2 lbs fresh pollock
1 1/2 lbs salted and dried pollock ( stockfish ) or 1 1/2 lbs cod , rehydrated for 24 hours water changed at least once ( stockfish )
1/2 lb fresh spinach
4 cups milk
3 tablespoons all-purpose flour
2 tablespoons butter
1 cup grated jarlsberg cheese
1 cup grated parmesan cheese
1/2 cup breadcrumbs
6 black peppercorns
2 bay leaves
1 tablespoon white wine vinegar
1 small pinch of grated nutmeg
salt & freshly ground black pepper

Instructions

1.Preheat the oven to 375°F.
2.In a large pot, bring 4 cups of milk to a simmer over medium heat. Add the salted and dried pollock, black peppercorns, and bay leaves. Cover and simmer for 5 minutes.
3.Remove the fish from the pot with a slotted spoon and place it in a baking dish. Discard the peppercorns and bay leaves.
4.Melt butter in a pan over medium heat. Add flour and whisk for 2-3 minutes, until it forms a roux. Slowly add the milk from the pot, whisking constantly to make a smooth sauce. Season with nutmeg, white wine vinegar, salt, and black pepper.
5.Add the fresh spinach to the sauce and stir until it wilts. Pour the sauce over the fish.
6.Combine the breadcrumbs, grated jarlsberg, and grated parmesan. Sprinkle the mixture over the fish and sauce.
7.Bake for 25-30 minutes, or until the gratin is bubbly and golden brown on top.
