Ingredients

225 g ginger biscuits , finely crushed
75 g butter
700 g good white chocolate
600 ml double cream
icing sugar or cocoa powder , to decorate
raspberries , to decorate ( optional )

Instructions

1.Grease and line two 20cm springform cake tins with baking paper.
2.In a bowl, mix together the crushed ginger biscuits and melted butter until well combined.
3.Press the biscuit mixture into the base of the prepared cake tins and chill in the fridge for at least 30 minutes.
4.Break the white chocolate into pieces and place in a heatproof bowl. Heat the cream in a saucepan until just below boiling point.
5.Pour the hot cream over the white chocolate and stir gently until the chocolate has melted and the mixture is smooth and glossy.
6.Pour half of the chocolate mixture over the biscuit base in each tin.
7.Chill the tins in the fridge for at least 2 hours or until set.
8.Remove the tins from the fridge and carefully remove the tortes from the tins.
9.Decorate each torte with raspberries and dust with icing sugar or cocoa powder.
