Ingredients

1/2 cup unsalted peanuts
1/4 cup blanched slivered almond

1 cinnamon stick , broken into pieces
2 whole cloves
1 poblano chile , seeded and chopped
2 serrano chilies , seeded and chopped
1 small garlic clove
1/2 Spanish onion , cut into chunks
5 animal crackers , toasted
1/4 cup unsalted butter
1/2 cup white chocolate chips
1/2 teaspoon salt
1/8 teaspoon fresh ground white pepper

Instructions

1.In a dry pan, toast the peanuts, almonds, and walnuts until fragrant and lightly browned.
2.Remove them from the pan and grind them into a fine powder in a food processor.
3.In a large saucepan over medium heat, toast the cinnamon stick and cloves until fragrant.
4.Add the chopped poblano chile, serrano chilies, garlic, and onion to the pan and sauté for a few minutes until the onion is translucent.
5.Add the ground nuts to the pan and stir to combine.
6.Add the toasted animal crackers and 1 1/2 cups of water to the pan.
7.Simmer the mixture for 15 minutes until the sauce has thickened, stirring occasionally.
8.Remove the cinnamon stick and cloves from the pan.
9.Using an immersion blender or transferring the mixture to a blender, puree the sauce until completely smooth.
10.Return the sauce to the saucepan over low heat.
11.Add the unsalted butter, white chocolate chips, salt, and white pepper to the pan.
12.Stir everything together until the butter and chocolate have melted and the sauce is smooth and silky. Serve immediately or refrigerate until ready to use.
