3 large eggs , room temperature

Instructions

1.Preheat your oven to 350°F.

4.In a separate bowl, sift together the cake flour and salt.
5.Using an electric mixer, beat the eggs and sugar in a large mixing bowl on high speed until thick and pale yellow. The mixture should fall back onto itself in a ribbon when the beaters are lifted.
6.Sift half the flour mixture over the egg mixture and fold gently but thoroughly with a rubber spatula. Repeat with the remaining flour mixture.
7.Fold in the melted white chocolate and butter mixture, taking care to not over mix or the batter will deflate.
8.Pour the batter into an ungreased 9-inch cake pan and spread it evenly.
9.Bake until the cake is springy to the touch and a toothpick inserted into the center comes out clean, approximately 20-25 minutes.
10.Cool the cake completely in the pan on a wire rack before removing and serving.
