Ingredients

2 lbs yukon gold potatoes or 2 lbs red potatoes
3 cups water ( or more to cover )
1 teaspoon salt
1 cup butter or 1 cup margarine , divided
1 1/2 cups finely chopped celery
1/4 cup finely chopped onion
1/4 cup milk ( or more , to desired consistency )
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon ground nutmeg

Instructions

1.Peel and chop the potatoes into 2-inch pieces. Rinse and drain the potatoes.
