Ingredients

1 lb lean ground beef
1 small onion , chopped finely
1 small bell pepper , chopped finely
8 ounces canned mushrooms , drained
12 ounces thin spaghetti
2 tablespoons dried parsley
12 ounces Rotel Tomatoes
12 ounces diced tomatoes
4 garlic cloves , minced
1 cup parmesan cheese ( fresh grated works best )
salt and pepper

Instructions

1.Cook spaghetti according to package instructions until al dente, then set aside.
2.In a large skillet, cook ground beef over medium heat until browned and fully cooked.
3.Add in chopped onion, bell pepper, garlic, and saute until vegetables are tender,about 5 minutes.
4.Add in mushrooms, Rotel Tomatoes, diced tomatoes, and stir until well combined. Let sauce simmer until desired thickness is achieved.
5.Season with salt, pepper, and dried parsley.
6.Serve spaghetti topped with meat sauce and a sprinkle of Parmesan cheese.
