Instructions

1.Combine the water with the olive oil in the pan of a bread machine.
2.In a bowl, whisk together the brown rice flour, cornstarch, potato starch, tapioca flour, sorghum flour, xanthan gum, granulated sugar, salt, and active dry yeast.
3.Pour the flour mixture into the bread machine pan, and mix with the wet ingredients. Knead the dough using the bread machine’s knead function.
4.While the dough is being kneaded, mix the ricotta and mozzarella cheeses together in a bowl.
5.Preheat the oven to 400°F.
6.Once the dough is ready, remove it from the bread machine and divide it into 8 pieces. Roll each piece into a ball and flatten it into a 6-inch disc.
7.Spoon the cheese mixture onto one side of each disc, leaving a margin of about 1/2-inch around the edge.
8.Season with salt and pepper, then add a layer of pepperoni. Fold the other side of the dough over the filling, and press the edges to seal.
9.Bake the calzones on a parchment-lined baking sheet for about 20 minutes, or until the crust is golden-brown and the filling is hot and bubbly.
