Ingredients

1 cup wheat bran
3 medium potatoes , boiled
2 medium onions , finely chopped
2 green chilies , finely chopped
1 teaspoon ginger-garlic paste
1/2 teaspoon turmeric powder
3/4 teaspoon red chili powder
3/4 teaspoon garam masala powder
2 cups oil
1 teaspoon cumin seed
1 bay leaf
salt
1 teaspoon mango powder ( amchur ) or 1 teaspoon lemon juice
1 cup finely chopped coriander leaves
Wheat bran cutlets are a healthy and delicious snack that are popular in India. They are made using wheat bran, mashed potatoes, onions and a blend of spices. Instructions

1.Soak wheat bran in water for 10-15 minutes. Squeeze out water and set aside.
2.Mash boiled potatoes and keep aside.
3.Heat 2 tbsp oil in a pan. Add cumin seeds, bay leaf and onions. Saute until onions become golden brown.
4.Add green chilies, ginger-garlic paste, turmeric powder, chili powder, garam masala powder and salt. Mix well.
5.Add soaked wheat bran and mix well. Cook for 5-7 minutes.
6.Add mashed potatoes and amchur powder or lemon juice. Mix well and cook for another 5 minutes.
7.Turn off the heat and add coriander leaves. Mix well and let it cool.
8.Divide it into small balls and flatten them to form cutlets. Heat oil in a pan and shallow fry cutlets until brown on both sides.
9.Serve hot with green chutney and enjoy!
