Ingredients

3 lbs chuck roast
2 cups cider vinegar or 2 cups red wine vinegar
1 cup beef broth
2 cloves
2 laurel leaves
5 peppercorns
5 juniper berries
2 medium onions
1 medium carrot
salt , to taste
pepper , to taste
2 ounces gingerbread
4 tablespoons apple butter
1 -2 tablespoon clarified butter or 1 -2 tablespoon lard
1 garlic clove
Westphalian Sauerbraten is a classic German pot roast that originated in the western region of Westphalia. It is famous because of its deep, tangy, sweet and sour flavors. The chuck roast is marinated in a mixture of vinegar, cloves, juniper berries, gingerbread, and other spices overnight, which gives it its unique taste. It's then slowly cooked in the oven. The resulting gravy is thick and flavorful, perfect for drizzling on top of the beef and served with potato dumplings, spaetzle or sauerkraut.

Instructions

1.In a large bowl, mix cider vinegar, beef broth, cloves, laurel leaves, peppercorns, juniper berries, onions, carrots and salt.
2.Add the chuck roast to the mixture. Make sure to cover it completely with the marinade.
3.Cover the bowl and let it marinate overnight in the refrigerator.
4.Preheat the oven to 350°F.
5.Remove the chuck roast from the marinade and pat it dry with paper towels.
6.Melt the clarified butter or lard in a deep oven-proof pot over medium heat.
7.Brown the beef in the pot until all sides are crispy brown.
8.Add the garlic clove and the previously prepared marinade to the pot.
9.Cover the pot with a lid and place it into the oven for 2 and a half to 3 hours or until the beef is fully cooked and tender to your preference.
10.Take out the pot from the oven and remove the beef from the pot. Set it aside.
11.Strain the remaining sauce and add the gingerbread and apple butter to it.
12.Place the pot back on the stove over medium heat and let it simmer until the sauce thickens.
13.Once the sauce is thick, add the beef to the pot, and let it simmer so that the flavor soaks in.
14.Serve hot and enjoy!
