1 container diced candied citron peel ( scant 1/2 cup )
1 1/2 cups sugar
1 cup margarine or 1 cup butter , softened
3 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon vanilla extract
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
3 large eggs
1 teaspoon lime zest
1 container mixed candied fruit , chopped ( scant 1/2 cup )
1 tablespoon light corn syrup
1 1/2 cups confectioners ' sugar
4 teaspoons hot tap water
2 teaspoons lime juice
1/2 teaspoon lime zest
1/4 teaspoon salt

Instructions

1.Preheat oven to 325°F.

4.In a large bowl, cream sugar and margarine or butter until fluffy and lightened in color.
5.Beat in eggs until mixture is light and fluffy, then add corn syrup and vanilla extract.
6.Gradually add the flour mixture and fruit and wine mixture to the butter mixture until all ingredients are incorporated.
7.Pour batter into a greased and floured 10-inch tube pan and bake for 1 hour and 45 minutes.
8.Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
9.In a small bowl, whisk confectioners' sugar, hot water, lime juice, lime zest, and salt until smooth; drizzle over the cooled fruitcake.
