Ingredients

2 small potatoes , diced and cooked
1/2 lb lean ground beef ( I use extra lean )
1/4 cup frozen mixed vegetables , cooked ( I use the peas , carrots and corn mix )
1 onion , diced
1/2 cup mixed red and green sweet pepper , diced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 beef bouillon cube , cube
1/2 cup butter , chilled , ( for flakier crust use 1/4 cup chilled lard , and 1/4 cup chilled butter )
1 1/2 cups flour
1/2 teaspoon baking powder
1 teaspoon salt
4 -6 tablespoons ice water
1 egg , beaten ( for brushing exterior of meat pies )

Instructions

1.In a large mixing bowl, combine the cooked diced potatoes, cooked frozen mixed vegetables, lean ground beef, diced onion, diced mixed red and green sweet peppers, salt, black pepper, onion powder, garlic powder, and beef bouillon cube.
2.Mix well until all ingredients are combined.
3.In a separate mixing bowl, whisk together the flour, baking powder, and salt.
4.Cut the chilled butter (or chilled lard and butter) into small cubes and add to the flour mixture.
5.Use a pastry blender or your fingers to work the butter (or lard and butter) into the flour mixture until crumbly.
6.Slowly add ice water, one tablespoon at a time, and mix gently until the dough comes together.
7.Divide the dough into 8-10 portions and shape into balls.
8.Use a rolling pin to roll out each dough ball on a floured surface to about 1/4 inch thickness.
9.Spoon the beef mixture onto one half of the rolled-out dough and fold the other half over to enclose the beef mixture.
10.Crimp the edges of the dough together with a fork.
11.Brush the top of each meat pie with beaten egg.
12.Bake in a preheated oven at 400°F for 25-30 minutes or until golden brown.
