Ingredients

1 broiler-fryer chickens , quartered
2 large onions , sliced
3 garlic cloves , minced
1 hot green chili pepper , minced
1 tablespoon salt
1/2 teaspoon ground ginger
1 teaspoon black pepper
1 cup fresh lemon juice
1 1/4 cups water or 1 1/4 cups chicken broth
5 tablespoons peanut oil
West African Lemon Marinated Chicken is a vibrant dish that brings together the beautiful flavours of Africa, featuring a blend of strong and aromatic spices. It’s a classic dish that has been passed down from one generation to the next, often referred to as Chicken Yassa. It’s a crowd-pleaser and is often served as a main dish for dinners or at special events. The dish is paired with boiled rice, and a side of roasted vegetables to make it a complete meal. The flavours of the dish are tangy, spicy, and juicy, and the recipe adds a unique flavour to the regular chicken dinner. To make it even more special, the dish can be paired with chilled white wine or a sweet lemonade.

Instructions

1.Mix lemon juice, water or chicken broth, salt, ginger, black pepper and 3 tbsp of peanut oil in a bowl.
2.Pour the mixture into a food grade plastic bag.
3.Put chicken pieces in a bag and seal them.
4.Shake the bag gently to coat chicken pieces well.
5.Marinate in refrigerator for 24 hours.
6.Take chicken out of the refrigerator and let it come to room temperature.
7.Heat remaining peanut oil in a pan and fry onions, garlic and chili pepper.
8.Add the marinated chicken to the pan, skin down. Fry for 2 minutes until the skin is nicely browned.
9.Turn chicken and fry for another 2 minutes.
10.Reduce heat and let chicken cook for 30 minutes on low heat with a lid on the pan.
11.Sprinkle with lime juice and serve.

PROS

The dish is super easy to make and only requires few ingredients.
Chicken is marinated overnight to give it a delicious flavour and is later fried in a pan for extra crispiness.

CONS

The recipe requires a long marination time, so it needs to be planned ahead.
Moreover, it needs to be closely monitored to ensure that chicken is not overcooked.
