Ingredients

4 slices dense , hearty brown bread
1 cup shredded extra-sharp cheddar cheese
5 tablespoons dark ale ( NOT beer )
2 tablespoons chilled unsalted butter
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/4 teaspoon freshly cracked pepper
1 pinch cayenne pepper
salt and pepper , to taste
Welsh Rarebit is a classic British comfort food made from cheese sauce poured over toast. It is a rich and savoury dish that is perfect for breakfast, lunch, or dinner. Instructions

1.Toast the bread slices until crisp.
2.In a small saucepan, melt the butter over medium heat.
3.Add the mustard and cayenne pepper, stir to combine.
4.Pour in the ale then whisk in the cheese.
5.Once the cheese has melted, turn off the heat.
6.Spread the Welsh Rarebit mixture on the toasted bread slices.
7.Add salt and pepper to taste.
8.Place in the oven and broil until bubbly and slightly browned.
