Ingredients

1 1/4 cups butter
1 1/4 cups brewed tea
1 can sweetened condensed milk ( NOT Evaporated )
1 cup golden raisin
1 cup black currants
1 cup chopped dates
1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
1 cup chopped walnuts
2 tablespoons apricot jam
Bara Brith, literally meaning speckled bread, is a tea-time favorite in Wales. Originated in the 19th century, this cake was typically made on baking day, using leftover tea and dried fruits. Bara Brith is also known as a Christmas delicacy, and it's often served with a spread of butter or even Welsh cheese. Although there are many variations of this recipe, the use of tea and dried fruits is a must. This cake is dense and moist, with a subtle sweetness that comes from the dried fruits and apricot jam glaze.

Instructions

1.In a large bowl, mix brewed tea and butter until well combined.
2.Add sweetened condensed milk and mix well.
3.Stir in golden raisins, black currants, and chopped dates.
4.Sift in all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and ground cloves. Mix thoroughly.
5.Fold in chopped walnuts.
6.Preheat oven to 350°F. Grease a 9x13 inch baking dish.
7.Pour in the batter and smooth out the surface.
8.Bake for 1 hour or until a toothpick comes out clean.
9.Take it out of the oven and wait for 10 minutes before serving.
10.Melt apricot jam in a microwave or on a stove, then brush it on top of the cake for an extra shine.
