Ingredients

800 g potatoes
400 g onions
100 g butter
1 teaspoon fresh thyme or 1/2 teaspoon dried thyme
salt and pepper , to taste
Welsh Onion Cake with Thyme is a traditional Welsh recipe that is often enjoyed during the colder months. Instructions

1.Preheat the oven to 190°C (375°F).
2.Peel and finely slice the potatoes and onions.
3.Melt half of the butter in a large pan over medium heat. Add the onions and thyme and sauté until the onions are soft.
4.Butter a baking dish with the remaining butter and layer half of the potatoes in the dish.
5.Cover the potatoes with the sautéed onions and season with salt and pepper.
6.Add another layer of the remaining potatoes and season again with salt and pepper.
7.Pour the melted butter over the top of the potatoes and cover with foil.
8.Bake in the preheated oven for 45 minutes, then remove the foil and bake for a further 15 minutes, or until the potatoes are golden brown on top. Serve hot.
