Ingredients

3 sprigs rosemary , finely chopped
salt
pepper
2 lamb loin fillets or 2 lamb neck fillets , weighing approx 227g each
3 tablespoons olive oil
150 g chestnut mushrooms , finely chopped
2 leeks , finely chopped
2 -3 garlic cloves , crushed ( depending how much you like garlic )
100 ml white wine
500 g puff pastry
1 egg , beaten
Welsh Lamb Wellington is a variation of the well-known Beef Wellington. Originating from England, this dish is now enjoyed all around the world. The lamb fillets are placed on a bed of flavorsome mushroom, leeks and garlic mixture and then wrapped in pastry. It is then baked to perfection in the oven and served with vegetables, potatoes or your favorite side dish. This dish is particularly great for special occasions or a romantic dinner with your partner.

Instructions

1.Preheat the oven to 200C/180C fan/gas 6.
2.Rub a generous amount of salt, pepper and rosemary over the lamb fillets.
3.Heat the olive oil in a frying pan over medium heat and fry the lamb fillets for 2-3 minutes per side until browned.
4.Remove the lamb fillets from the pan and set them aside.
5.In the same pan, fry the mushrooms for 5 minutes until they are golden brown.
6.Add the leeks and garlic and cook for a further 5 minutes.
7.Pour in the white wine and cook until it has reduced by half.
8.Roll out the puff pastry on a floured surface till it's large enough to cover the lamb fillets.
9.Place the mushroom mixture onto the pastry, leaving enough space for the lamb fillets.
10.Put the lamb fillets on top of the mushroom mixture and wrap them in the pastry.
11.Brush the pastry with the beaten egg and bake the Wellington in the oven for 20-25 minutes until the pastry is golden and the lamb is cooked to your desired level.
12.Remove the Wellington from the oven and allow it to rest for 10-15 minutes before serving.
