1 lb leek , washed and sliced
1/4 cup butter
2 teaspoons cumin
1 teaspoon cayenne pepper
salt and pepper
3 1/2 cups flour
3/4 cup lard or 3/4 cup butter
1 cup water
1 pinch salt
2 1/4 cups chicken stock

Instructions

1.Preheat the oven to 350F.
2.In a large skillet, brown the pork over medium-high heat for 5-7 minutes, breaking it up into small pieces as it cooks. Drain any excess fat.
3.Add the leeks, butter, cumin, cayenne pepper, salt and pepper to the skillet. Cook until the leeks are soft, about 10 minutes.
4.In a separate bowl, combine the flour, lard or butter, water and salt to form a dough.
5.Divide the dough in half and roll one half out into a circle to fit the bottom of a 9 inch pie dish.
6.Stir gelatin into chicken stock in a saucepan and bring to a boil. Pour some of the stock into the pie crust.
7.Add the meat mixture on top of the stock, spreading it out evenly.
8.Roll out the remaining dough and cover the pie.
9.Bake for 45-50 minutes, or until it's golden brown. Let it cool for at least 5-10 minutes before serving.
