Ingredients

250 g all-purpose flour
1 teaspoon baking powder
1 teaspoon fine sea salt
175 g cooked bacon , chopped
100 g mature cheese , such as cheddar , shredded
1 teaspoon prepared mustard
1 pinch cayenne
1 teaspoon dried thyme leaves
2 eggs , lightly beaten
65 g butter , melted
125 ml low-fat yogurt
Welsh Cheese and Bacon Muffins are a delightful savory muffin that can be enjoyed for breakfast or as a snack. Instructions

1.Preheat the oven to 200C/180C Fan/Gas 6.
2.Sift the flour, baking powder, and fine sea salt into a large mixing bowl and stir.
3.Add the chopped bacon, shredded cheese, prepared mustard, cayenne, and dried thyme leaves to the mixing bowl, and mix well.
4.In a separate bowl, whisk together the eggs, melted butter, and low-fat yogurt.
5.Pour the egg mixture into the mixing bowl, and stir until all of the ingredients are combined.
6.Spoon the batter into muffin tins, filling each about three-quarters full.
7.Bake for 20-25 minutes or until the muffins are golden brown and a skewer inserted into the center comes out clean.
8.Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
