1/2 lb boneless mutton , cooked and diced
1 onion , finely chopped

1 cup lamb stock , about
6 lbs lamb bones , including the shank and neck
5 quarts water , about
1 bouquet garni , including leek and celery
1 garlic , bulb unpeeled
2 medium onions , each stuck with
1 whole clove
4 carrots

Instructions

1.Preheat the oven to 350°F.
2.In a large bowl, mix the flour and salt together.
3.Add the slowly melted lard and water to the bowl, and mix until a dough forms.
4.On a lightly floured surface, roll the dough out to about 1/4 inch thickness.
5.Use the dough to line the base of a 8 inch pie dish.
6.In a separate bowl, mix together the cooked and diced mutton, finely chopped onion, and mixed herbs.
7.Spread this mixture over the dough in the pie dish.
8.Pour enough lamb stock over the top of the mixture to almost cover it, but not entirely.
9.Roll out the remaining dough and use it to cover the top of the pie, sealing the edges well.
10.Make a few small slits in the top of the pie.
11.Place in the oven and bake for 1 hour and 30 minutes.
