2 lbs boneless skinless chicken breasts
3/4 lb green beans
2 medium celery ribs , thinly sliced
4 ounces green seedless grapes , halved ( about 1 cup )
1/4 cup fresh lemon juice
1/4 cup reduced-sodium fat-free chicken broth
1 tablespoon Dijon mustard
3 tablespoons fresh tarragon leaves , chopped
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 cup olive oil

Instructions

1.Preheat oven to 425°F.

4.Cut green beans into 1-inch pieces and blanch in boiling water until tender, for approximately 3 minutes.
5.Slice cooked chicken into small pieces. In a large bowl, mix together the roasted potatoes, cooked chicken, blanched green beans, celery, and grapes.
6.In a separate bowl, whisk together the lemon juice, chicken broth, Dijon mustard, tarragon, salt, and black pepper until well combined. Slowly whisk in the olive oil until the dressing is emulsified.
7.Pour the dressing over the salad and toss to coat. Serve cold.
