Figgy pudding is a classic British Christmas dessert that dates back to the 16th century. It is typically made with dried fruits, spices, bread crumbs, and suet. Our recipe uses fresh figs and butter instead of suet for a modern twist on this traditional dish. The pudding is moist and flavorful, and has the consistency of a dense cake. It is often served with custard or brandy butter for added decadence.

Instructions

.In a large bowl, cream the butter with an electric mixer until fluffy.
.Gradually add in the eggs and molasses, and beat until well combined.
.In a separate bowl, mix together the chopped figs, lemon rind, and buttermilk.
.In a large bowl, stir together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
.Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
.Grease a pudding bowl, and pour the batter into the bowl.
.Cover with cheesecloth and tie with string.
.Place the pudding bowl in a large pot, and fill the pot with water until it reaches halfway up the sides of the bowl.
.Bring the water to a boil, cover the pot, and reduce heat to low.
.Simmer for 3-4 hours, or until the pudding is cooked all the way through.
