1/3 cup icing sugar , sifted
250 g unsalted butter , softened
1/2 cup rice flour
1 1/2 cups plain flour ( all-purpose )
1 tablespoon wattleseed
1 pinch salt

Instructions

1.Preheat the oven to 180°C (355°F) and line a baking tray with baking paper.
2.In a large bowl, cream the butter and sifted icing sugar until light and fluffy.
3.Add both flours, Wattleseed and salt and process until the mixture resembles coarse breadcrumbs.
4.Knead the dough until just combined, and press into a 2.5cm (1 inch) thick circle.
5.Cut into desired shape and bake for 15-20 minutes or until golden brown.
