Ingredients

1/4 cup oil
1 red onion , minced
1 red bell pepper , minced
1 clove garlic , thinly sliced
1 teaspoon minced fresh ginger , or to taste
2 pounds watermelon , coarsely chopped
1 pound tomatoes , coarsely chopped
1 tablespoon lime juice , or to taste
1 tablespoon curry powder
1 pinch salt , or to taste
1 pinch white sugar , or to taste
Watermelon Chutney is a fresh and tangy sauce that is perfect for adding flavor to any dish. Instructions

1.In a large skillet, heat oil over medium heat
2.Add onion, bell pepper, garlic and ginger. Cook for 5 minutes or until onions are transparent.
3.Add watermelon, tomatoes, lime juice, curry powder, salt and white sugar to the skillet and cook until the watermelon and tomatoes are soft.
4.Remove from the heat and allow mixture to cool for 5 minutes.
5.Transfer the mixture to a blender and blend until desired consistency is achieved.
