Ingredients

1 watermelon
salt

2/3 cup blanched slivered almond , lightly toasted
1/4 cup sliced scallion , white and green parts
12 red radishes , thinly sliced ( about 1 1/4 cups )

Instructions

1.Cube the watermelon, removing the seeds if necessary. Season with salt and let it sit for at least 20 minutes.
2.In a small bowl, whisk together the extra virgin olive oil, balsamic vinegar, and fresh ground black pepper. Set aside.
3.In a large mixing bowl, add the arugula leaves, toasted almonds, sliced scallions, and sliced radishes. Mix well.
4.Add the cubed watermelon to the mixing bowl and toss everything together.
5.Drizzle the dressing over the salad and mix well before serving.
