Ingredients

1 joint lamb shoulder
2 -3 carrots
6 -8 shallots or 2 large onions
1 pint water
6 cloves garlic
pomegranate ( if in season ) ( optional )

Instructions

1.Preheat the oven to 170°C/325°F/Gas Mark 3.
2.Place the lamb shoulder in a deep oven-proof dish and pour in the water.

4.Peel and chop the shallots or onions and add them to the dish.
5.Crush the garlic cloves and add them to the dish.
6.Cover the dish with aluminum foil and place in the oven.
7.Cook for 4-5 hours, or until the lamb is tender and falls apart easily.
8.Once cooked, remove the lamb from the dish and shred the meat from the bone using a fork.
9.Place the shredded lamb into a bowl and serve either on its own or with pomegranate seeds as a garnish (if in season).
